20 pounds boneless, skinless chicken thighs
2 ½ pounds Sukhi's Classic Curry Paste
½ gallon water
2 pounds sour cream
1 bunch cilantro, for garnish

2 pounds plain yogurt
Lemons and onions, sliced, for garnish
Make shallow slices into the thigh meat. Mix Sukhi's Tandoori Marinade with the yogurt and marinate the chicken overnight in the marinade mixture. The next day, over a sheet pan, arrange marinated chicken on a wire rack to ensure even cooking. Set convection oven to 425° and bake for 20 minutes. Alternatively, broil chicken on each side for 10 minutes. Garnish with slices of lemon and onion and serve. Yield: 20 Lbs.

15 pounds lamb meat
1 pound Sukhi's Korma Paste
1 pound Sukhi's Curry Paste
12 cups water
2 pounds yogurt
In a heavy pan, cook lamb meat with Sukhi's Korma Paste and the water. When the meat is soft, add Sukhi's Curry Paste and the yogurt. Cook until the curry is thick. Serve with basmati rice or naan. Spinach can also be added for a different flavor. Yield: 15 Lbs.
